Week of 3/22/21
Monday: Chicken and stuffing casserole
Waste not, want not. Using the leftovers from last evening’s beer can chicken and channeling my inner 1950s June Cleaver, I’ll add in some low sodium cream of mushroom soup, then top it with stuffing (I add sage, carrots, celery and some broccoli to the stuffing) and bake it all together.
Tuesday: Chicken taco salad
If it ain’t broke- don’t fix it… everyone likes it, everyone eats it, it takes me 15 minutes.
Wednesday: Naan pizza
Make your own! This week I will get fresh mozzarella pearls, some black olives for my mini-me and some arugula and chorizo for the big me, and hubs. You can even do this on the grill if you are fixin’ to get outside. It takes SO good on our charcoal grill.
Thursday: Grilled bacon ranch chicken kabobs with broccoli
I will do the broccoli on the grill too- in foil with some olive oil, salt and pepper, because I can, and because dishes.
Friday: Ground Sausage, Cheese and Spinach Pasta
I usually just make pastas up as I go, but for your asking purposes: brown the sausage with garlic, salt, pepper, once cooked, add a bit of dry white wine, shredded parmesan cheese and some cream. Add baby spinach at the end so it just starts to wilt and spoon it over fresh pasta (my son now says he will only eat fresh pasta… I have ruined him). Adding some lemon is good too, even capers, roasted red peppers… endless possibilities.
Saturday: Grilled flank steak with asparagus and roasted cauliflower
Full disclosure: my child will be eating chicken nuggets or a hot dog tonight. He digs none of these things.
Sunday: Sunday Funday- see where the day takes us.
