Week of 3/15/21


Monday: Whole wheat crust pizza and salad

Sliding into Monday like…


Tuesday: Fish Tacos

Taco Tuesdays are just it man. Yo quiero tacos… I use a white fish, haddock or tilapia- and fresh lime and cilantro with a vinegar coleslaw mix instead of lettuce!


Wednesday: Shepherd's pie

Irish-ish in honor of St. Patty’s Day! I will do half peas and half corn since my husband is picky. Funny how he won’t eat peas but our four year old will! I just brown beef with cream of mushroom soup, add that to the bottom of a casserole, peas on top of that, and then mashed potatoes on top of that. No real recipe. I do add spices to meat mixture and potatoes depending on my mood (chile pepper, paprika, garlic, thyme… whatever moves me)


Thursday: Strawberry and blueberry pancakes with bacon and tater tots

Who doesn’t love breakfast for dinner here and there?!


Friday: Chicken piccata and salad

I salt and pepper butterflied chicken breasts, lightly flour, pan fry adding lemon while it cooks. Once the chicken has browned a bit, I add a bit of dry white wine, then capers, basil and lots of fresh garlic as it cooks! Add more liquid if you want sauce, thicken it with some flour... Some fresh pasta and a light salad - VOILA! Oh yeah, a good glass of wine. That makes it a great Friday!


Saturday: Take out or leftovers!


Sunday: Beer can chicken, grilled potatoes and onion, broccoli

My husband requests this as soon as a glimmer of warmer weather is on the horizon. And yes, we do use a beer, and it is GLORIOUS. I don’t really follow the recipe I linked, but just so anyone who hasn’t heard of it can check it out. I typically use a fresh spice rub on the chicken, put some lemons in between the skin and meat then set it on the grill and cook lowwww and slowwwww! The potatoes I thinly slice with vidalia onion, add salt and pepper and olive oil in a foil packet and grill it up. Sunday Funday.

Produce:

2 bags of mixed salad greens (Monday, Friday)

1 bag coleslaw mixed/shredded cabbage (Tuesday)

2 pints of cherub tomatoes (Monday, Tuesday, Friday)

1 cucumber (Monday and Friday)

2 bunches broccoli (Sunday)

1 bag red potatoes (Wednesday, Sunday)

1 big vidalia onion or 2 small (Friday and Sunday)

1 bunch cilantro (Tuesday)

2 lemons (Friday, Sunday)

1 lime (Tuesday)

Strawberries (Thursday)

Blueberries (Thursday)


Dairy:

Shredded mozzarella cheese (Monday)

Shredded Mexican cheese (Tuesday)

Finely shredded parmesan (Friday)


Meat:

Haddock, Tilapia or other fresh white fish (Tuesday)

1 lb lean ground beef (Wednesday)

1 package bacon (Thursday)

Thin chicken breasts (or butterfly them yourself) (Friday)

1 whole chicken (Sunday)


Frozen:

Peas (Wednesday)

Corn (Wednesday)

Tater tots (we love the Alexia sweet potato tots!) (Thursday)


Other:

1 whole wheat pizza dough (Monday)

1 package corn tortillas (Tuesday)

1 box pancake mix (or make it yourself!) (Thursday)

1 jar pizza sauce (I like Raos) (Monday)

1 can cream of mushroom soup low sodium (Wednesday)

1 small jar capers (Friday)

Dry white wine or cooking wine (Friday)

1 can of beer (any will do but corona or a light beer does great) (Sunday)
