Week of 10/18:
Sunday: Butternut Squash Soup and Grilled Cheese Sammies
When I made butternut squash soup a few weeks ago, when I roasted garlic and squash and pureed, I froze half of it. So, tonight all I have to add is broth, cider, white cheddar cheese and voila! Fall deliciousness.
Monday: Shredded Buffalo Chicken Salad
Chicken thighs in the slow cooker for the win. Shred it, add some hot sauce and put it on top of a good salad. Easy for me to make during my virtual hours before I work the evening on campus!
Tuesday: Empanadas
I have not made these in years- instead of making homemade dough, I will use crescent dough so it will go faster. I will use any leftover chicken from last night and add cheese, sauteed peppers and onions with cumin and bake until crisp.
Wednesday: Frozen Pizza
You can’t win ‘em all. I am working this eve and don’t have the energy to prep anything before I leave.
Thursday: Marinated grilled chicken, roasted ranch cauliflower, rice pilaf
I’ll use whatever marinade I have on hand or just balsamic dressing, then I will melt some butter and add some ranch seasoning, toss the cauliflower in it and roast!
Friday: Grilled steak with an herb chimichurri, grilled potatoes and onions, brown sugar balsamic brussel sprouts
This sounds super fancy, but it is actually pretty easy. My chef nephew Justin made us the most delicious steak - he topped it with a chimichurri that was simply olive oil, chopped herbs of choice, garlic, balsamic vinegar, salt and pepper. It was to die for! For the potatoes I just thinly slice taters and onions add some oil, salt and pepper and put in a foil packet for the grill. The brussels get tossed with oil, vinegar, brown sugar, salt and pepper and they roast!
