Week of 5/31
Monday: Grilled pizza
Happy Memorial Day! We don’t have a traditional cookout or anything planned so we are doing a twist on grilling for the day! We have a pizza stone we use directly on the grill to make it easier.
Tuesday: Quesadillas
We will do veggie quesadillas with zucchini, yellow squash, tomatoes and black olives- topped with fresh salsa and avocado.
Wednesday: CAKE FOR DINNER!
Today is Alden’s 5th birthday and he is requesting cake for dinner (don’t worry, he will eat plenty of other great things the rest of the day!) He wants a peanut butter and chocolate cake with chocolate frogs, dinosaurs and sharks. This is a tall order but I will try my hardest to make it happen! Lesson learned - don’t ask, just make something good and he will like it no matter what.
Thursday: Grilled marinated chicken, salad, quinoa
I’ll use a grillmates marinade packet and the rest is easy peasy.
Friday: Charcuterie platter
Fruit, salami, soft cheese, hard cheese, nuts, some crunchy bread and veggies. Just an easy al fresco evening!
Saturday: Unknown - we may be at the river, we may not. I can’t think this far ahead because I am somewhat stressing about making chocolate dinos, frogs and sharks for a birthday cake that is very, very important to a little boy, haha!
