Monday: Thai Quinoa Salad
My first time making this- I may decide to substitute jasmine rice? But it will be a game day decision!
Tuesday: Marinated grilled chicken, grilled potatoes and asparagus
I will use a Grillmates marinade packet for the chicken. Then, thinly slice potatoes and onions, mix with olive oil, sea salt and pepper and put in a foil packet for the grill. Lastly, for the asparagus I will put some olive oil, sea salt, pepper, garlic and lemon juice in a foil packet for the grill, too.
Wednesday: Pork carnitas tacos - for CINCO DE MAYO!
Thursday: Pork carnitas salad
Using leftover shredded pork, we will make a nice Mexican-style salad!
Friday: Out!
Saturday: Cheddar Dill Mac n Cheese with peas and bacon
White cheddar with onions, dill, peas and bacon - your pasta of choice. Cook the onions in butter, once translucent add a dry white wine. Then add some cream, then peas and crumbled bacon. Stir in pasta and white cheddar and bake.
Sunday: No idea- it is Mother’s Day and I am taking the day off!
