Sunday Scaries - Meal Plan Week of 6/28

It has been a while friends! Here is the meal plan for a Fourth of July week-weekend with various visitors at the riv! Most of it is simple, grilled and/or in a crock, easy to assemble because really, I want to capitalize on time with people, chillin' on dinosaur floats and playing, not preparing everything. Happy Fourth of July!


Week of 6/28


Sunday: Burgers, dogs, chips and watermelon

Keeping it simple on a hot Sunday :)


Monday: Grilled pizza

I got some naan flatbread instead of making dough from scratch this time. Again simple is key on hot days when you don’t want to be over a hot oven or grill long!


Tuesday: Organic and grass fed beef hot dogs from one of my fav places, Saylor’s with a big ol’ salad

I have been skipping the buns any time I eat these, but they sure are good atop a salad!


Wednesday: Tacos!

Mixing things up and having Tacos on a day other than Tuesday- oh no! What will the universe do?


Thursday: Veggie burgers and picked zucchini salad


Friday: Crock pot mac n cheese, tomato, avocado and cucumber salad

I use cherub tomatoes for the salad, chop everything up, add some squeezed lemon juice, salt and pepper and that is it. So fresh, so delicious!


Saturday: Brisket sammies with salad


Sunday: Charcuterie, Vegetarian taco dip, veggies and dip

I got the taco dip recipe from my older sister long ago: mix cream cheese and sour cream (I add some taco seasoning to it sometimes) and place it at the bottom of a pyrex dish, add a layer of really good salsa or pico, then a layer of Mexican cheese, and top with black olives and scallions. Bake at 350 for 15-20 minutes. NOMMMMM. Also, because I am a nerd the dip and the veggie platter will be patriotic in nature with their arrangements! America!

Shredded Mexican cheese (Wednesday, Sunday)

Cream cheese (Sunday)

Sour cream (Sunday)

Burgers (Sunday)

Hot dogs (Sunday and Tuesday)

Prosciutto (Sunday)
