Week of 3/1
Monday: White chicken chili and cornbread
I follow the linked recipe closely enough, but I use black beans instead of the extra garbanzos and do not use green chiles because my little one doesn’t like them! Then I make jiffy cornbread, don’t judge.
Tuesday: Taco salad
Whatever you wanna put on a taco salad! I will most likely have extra chili so we will put that on ours this week.
Wednesday: Shake n bake chicken, lemon and parmesan asparagus, mashed potatoes
Nothin' wrong with some 1960s style shake n bake for a quickie meal. I roast my asparagus with a bit of lemon, olive oil, salt, pepper and sprinkle parmesan cheese on top.
Thursday: Chicken soup and grilled cheese
I actually do not need to shop for any chicken soup fixins as I froze half of the homemade soup I made last week, so I could use it for another meal (if you need ingredients and link see last week's post).
Friday: Takeout
If I am a betting woman, we will get Thai!
Saturday: Spaghetti squash and meat sauce
I just half the squash, roast with a bit of olive oil and salt, then brown meat, use a jar of sauce (I like Raos or Newman’s Own) and throw it together. It tastes great, super easy and is so much healthier than regular pasta!
Sunday: Meat, cheese and veggie tray
Sometimes we like to just throw together a quasi-charcuterie (or "cooter board as my friends and I have affectionately dubbed it... be offended, that is okay). I also cut up random veggies (typically what is left over in the fridge) and nosh. Some meat and cheeses we like (I do bake my brie either in a pastry puff with jam on top or just with jam), and we have crackers, apples/grapes, olives etc… Super easy and satisfying for a Sunday eve to just relax with a glass of wine.

1 pack of chicken breasts - if none left in freezer (Monday and Wednesday)
2 lbs ground beef - if none left in freezer (Tuesday and Saturday)
Frozen:
1 bag of sweet corn (half used Monday and half on the salad, Tuesday)
Other:
Bread (Thursday)
Shake n Bake extra crispy (Wednesday)
Nut Thins (Sunday)
Olives- if none in house which for us is rare (Sunday)
Jiffy cornbread mix (Monday)
1 can of Black beans low sodium (Monday)
1 carton chicken broth (Monday)
