Baseball opening week and Easter all in one week. Get that grocery shopping done early - it will be a zoo this weekend! :)
Week of 3/29/21
Monday: Egg roll in a bowl
Tuesday: Beef Tacos
Wednesday: Balsamic and cilantro grilled chicken, cilantro basmati rice and green beans
I marinate chicken overnight with olive oil, balsamic, garlic, pepper and salt with A LOT of cilantro. For the rice, I cook it normally and toward the end of it cooking I add olive oil, balsamic, garlic and cilantro.
Thursday: Philly Cheesesteaks and fries
It is baseball’s OPENING DAY! So we want to do something ballpark-y. Aaron is in charge on cheesesteak nights, and he makes a delicious PROVO WIT (in Philly terms that means provolone cheese with onion).
Friday: Spring Veggie Pasta Carbonara
I have never made this before- I will most likely use asparagus and peas, even though Aaron does not really care for peas! I may cheat and add some bacon too- because, well, bacon.
Saturday: Take out
Tomorrow is Easter. Chill.
Sunday: Grilled pork loin, balsamic butter glazed carrots and garlic dill roasted potatoes
HAPPY EASTER PEEPS! We are not huge ham fans, so we will have another form of the other white meat. Most likely I will get a nice pork loin from Saylors the awesome butcher and specialty food store near us. The carrots I make are just roasted with butter, balsamic and garlic.
