Monday: Mini meatloaves in pepper rings with salad

Tuesday: Chicken Tacos
Same ol’ - easy peasy and everyone’s satisfied!
Wednesday: Rotisserie chicken and avocado salad sammies
Omit the bread if you want to cut down on carbs, I sometimes will add bacon if I have any and it feels right. I also add tomatoes.
Thursday: Grilled mojito lime pork chops, Brussels sprouts, Lime and green onion quinoa
It’s supposed to be the first real dose of spring and in the 60s so yay for grilling without freezing! I use Grillmates Mojito lime marinade packets, roast or grill my brussels with olive oil, salt, pepper, a smidge of brown sugar and balsamic vinegar, and just mix quinoa with green onions and lime juice.
Friday: Egg roll in a bowl with rice
This is surprisingly easy and tasty- I typically use ground sausage but it is great with any meat, or meatless and just add more veggies!
Saturday and Sunday: I have no idea.. leftovers? Find things in my freezer? Go to the winter farmer’s market? Takeout? I will decide then.
